KEENE, N.H. (MyKeeneNow) Exciting news for ramen lovers: a new ramen house is set to open soon, and it promises to bring a fresh and authentic twist to the local dining scene.
Noble Ramen House, the latest venture by Jared Marsh, former owner of Missing Link Fine Foods at Branch and Blade Brewing and former chef of the Guru Food Truck in downtown Keene, is slated to open on Davis Street in the spring of this year. While there isn’t an official opening date yet, Marsh is optimistic, with just a few final touches to complete on the building before the tables, seats and bar stools can be set in place.
The concept for Noble Ramen House began after Marsh’s success with Missing Link, where he frequently featured Asian-inspired dishes. His passion for vibrant, flavor-packed dishes that excite the taste buds led him to perfect ramen recipes that rival those found in major cities.
“People were blown away, saying that they were on par or better than some of the authentic ramen places in Boston,” Marsh described. For this new restaurant, Marsh is taking it a step further by incorporating traditional techniques – making his own noodles from scratch and crafting rich broths using bones, tamari and a variety of other ingredients to create the ultimate ramen experience.
Marsh and his wife, Carly, discovered the new restaurant location on Davis Street, the former long-time location of Anderson the Florist, while out on a walk.
“We thought it would be a great spot for a restaurant, and then shortly after, a friend contacted me and said that it was up for lease,” he said. “The owners of the building really wanted a restaurant in there, so they did a lot of the groundwork for me.”
He and his partners still had quite a bit of work to put in to make it a restaurant, from plumbing and electrical to mounting a hood system.
Marsh signed a lease last year and thought it would be a quick process to open, but hadn’t realized how much time getting permits would take. They also started out thinking they would do a casual dining experience, but after putting in their efforts they decided to take the restaurant in a different direction and really elevate the space.
Benedict Enterprises, a reputable construction business out of Hinsdale, have been doing a large portion of the renovations and are focusing a lot on the fine details to match Marsh’s style of food.
“We will be putting in a beautiful bar and this restaurant will be casual dining, but with the way I like to plate food, it will appear to be fine dining,” he said. “I really like to put a beautiful twist on common food. We are super excited to bring an experience and something new to the City of Keene. Something that hasn’t really been done here before.”
When it came time to choose a name for his new ramen venture, Marsh toyed with the idea of “Amen Ramen,” inspired by the church next door. However, that name was already taken, so Marsh and his wife set out on a new search for inspiration.
As they dug into different cultural references, they stumbled upon something fascinating – ancient Japanese culture’s strong focus on nobility and rank. It turns out, everything in Japan was once associated with a certain level of “noble” standing, whether it was a person, a thing, or even an idea. With this in mind, they thought, why not create a ramen house that reflects this sense of grandeur and respect? The name is meant to capture both the rich tradition of ramen and the high-quality, elevated flavors that Marsh plans to serve.
Noble Ramen House will offer a traditional ramen house full menu with five styles of ramen, numerous small plates, large plates and large bowls, hints of Thai and Vietnamese cuisines and items such as bao buns and poke bowls. They will also offer a dessert menu and a full bar with cocktails, beer, wine and saki.
“This will be a true scratch kitchen,” said Marsh. “All the sauces, broths, buns, and every single thing will be house made. You can’t really have your own identity without doing that. I want to make this an incredible and unforgettable place.”
